The Griffon History

In 2013, Ken Scibetta and Ed Webster launched the first Griffon Gastropub on Military Rd. in Niagara Falls, NY. With the opening of this new Griffon, their initial venture, the Lewiston Village Pub, closed down. After achieving success in Niagara Falls, they expanded with a second Griffon Gastropub in Clarence, NY, and later, another one in East Aurora, NY.

They introduced a slightly different culinary concept with The Griffon House in Lewiston, NY, located in the historic Clarkson House building. Several years later, an opportunity arose to take over the former Riverside Inn/WSL spot along the Niagara River. Consequently, The Griffon House closed, paving the way for the Griffon Brewery & Gastropub on the Lewiston waterfront.

Throughout the years, these gastropubs have consistently focused on beer, featuring extensive tap menus known for their excellent quality and curation. Another opportunity presented itself in Youngstown, NY, where they took over the former Melloni's Marketplace supermarket location, kickstarting a new project.

After several years marked by planning, construction, COVID-related delays, and more, Griffon Brewing is set to open its doors on February 4, 2024.

Griffon Brewing is the outcome of years spent exploring beers from different parts of the world. Recognizing the excellence of beer, even in unexpected places, it was crucial for Griffon Brewing to create top-notch beers across various styles.

In an era where new breweries seem to pop up frequently, Griffon Brewing is committed to producing relevant, high-quality beer that contributes meaningfully to the craft beer scene. We aim to avoid being seen as just another forgettable, disposable brew. Our goal is to consistently deliver exceptional beer without missing the mark.

Although we are in the early stages, our plans include crafting small batch imperial stouts, impressive IPAs featuring the finest ingredients and hop profiles, and various other styles using only the best ingredients.

Visit our Tap Room at 200 Lockport St. in Youngstown, NY, for the ultimate Griffon Brewing experience. Some beer selections will only be available here, while our main beers can also be found at other Griffon restaurants.
